Having spent 20 years in the Red River Valley, I'm quite partial to good old reds, but many like russets. I like to bake reds without foil or any other coverings to get a crisp skin--yes, I like to eat the skins also. What's your favorite, and why?

Russets look nicer for those of us in the restaurant business, reds taste better. I'm a big fan of the crispy skin with an inappropriate amout of butter.

Yukon golds sliced up and fried in plenty of butter with some onion mixed in. Then Sprinkled with seasoned salt.

Red River Valley Reds roasted with a touch of bacon grease smear on the outside or in foil packs with onion, butter, and bacon.

Reds. Best is to dig a few early out of the garden. Slice thin with skin on, fry lightly with peas, and then pour cream on and simmer for a bit.

Really all depends on how you are cooking them:

Baby Reds – boiled whole
Idaho Russets – Baked
Yukon Gold – grilled, sliced, cubed or just about any way you prefer
Red River Reds – mashed, with a little skin on

your baked russets taste like potato flakes

and they require 2 potato volumes of butter just to keep me from choking on their powdery innards

Red Nordland, baked with a rub of olive oil to get that extra crispy skin. Bake at 350 with a temp probe in and when center of potato hits 185 quit. You also need to poke with a fork a few times before baking and the only foil is used in the oven to catch any drips.

Thanks Brokenback, I didn't find any on the website but we get a couple different seed catalogs neither one have showed up yet . Grand kids were excited to get theirs last week after we planted a small garden in their backyard last year. Unreal how well gardens do in RRV soil and climate.

I don't recall ever eating a bad potato.

Only need to cook/bake one for 4 people. :D

I like them diced up in a pan with butter and just about any seasoning they make sprinkled on them and then baked in the oven until golden brown.
