I got burned out on the typical BBQ meals so I wanted to do something different on Memorial day. I had a beef tongue in the freezer and got this idea from another site. Game on. Cleaned it, season, smoked at 275 until IT 160ish, wrapped in foil and cooked to 200ish. I was surprised how good it was. But then I like nuts, hearts and gizzard too. I ate mine with homemade guac, fresh salsa and cilantro.

I had tacos de lengua at a roadside stand in Texas a couple years ago. You knew the place was going to be good because it was covered in mismatched steel siding and the woman behind the counter spoke about 5 words in English.

We had three different types of tacos, and the lengua was easily my favorite. So much flavor going on, and the texture was perfect.

I could have sat down and eaten a half dozen (nursed with some frosty cervesas), but it was a work trip and a quick sample was all we had time for. Sadly...

To me that is definitely different... looks excellent cooked and also plated, nice work!

Looks great, had some at a local stand a week or so, one of my favorites. The tacos de buche were even better; we channeled our inner Andrew Zimmern for that one and well worth it.

Good Stuff!!! Had more than a couple versions of this dish in several South American countries. By far the best was ALWAYS the "roach coach" carts on the street or the folks that served lunch to folks on the porch of their homes or in their living rooms. Brings back lots of yummy memories. Thanks Whisky!!!
