Baked walleye/perch recipes?

Looking for some new ways to bake walleye or perch other than dipping in egg and bread crumbs. Figured you people would know some good ones! Thanks.:;:cheers

We like to just simply brush with olive or canola oil and season with a spice mix, blackened seasoning I make is a favorite, then a small amount of oil in a hot cast iron pan. I see no reason this would not work in an oven on a sheet pan with a wire rack either. Use just enough oil to help the seasoning stick to the fish.
Wife also had a coconut shrimp recipe that is for the oven but I converted it over to the grill, would also work on fish.

Cube up your fillets
Take a big glass baking pan and grease the bottom. butter pam whatever.
cover the pan with the chunks.
Cut up an onion and bell pepper and cover the chunks.
Take two cans of cream of mushroom and a tub of sour cream and mix them into a bowl.
Cover everything with that whipped up mixture.
Take two bags of shredded cheese and cover everything with the cheese.
Bake at 425 for 45 min.
Remove and cover everything with crushed croutons.

Spray olive oil on a glass baking dish, place fillets on dish, drizzle melted butter on fillets, add season salt and lemon pepper to taste, bake in preheated oven at 425 to 450 degrees for no more than 15 minutes depending on the thickness of the fillets. Quick, simple, delicious, easy to clean up. Making it tonight for my lovely spouse of 45 years!

Fin that is even healthy. Good way to cook and you even get to taste the fish.

No need to get fancy with it. Just put some fish in aluminum foil with butter garlic salt and lemon pepper and you got some dang good fish to eat!

It's low fat too!!!

Sounds similar to some cheesy potatoes I love to eat. But instead cheesy fish....Sounds awesome.

Bake on cookie sheet lined with foil. Apply layer of butter to fillet (amount like toast)-sprinkle small amount of dill weed. Coat with mayonnaise (amount like sandwich) top side only. Bake at 400 for 20 minutes. Retains flavor and moisture.

we try to do a fish fry every weekend we go to devils... was deep frying up to 10# of fish and feeding up to 30 people with all the fixins... i have an uncle who tries to eat more healthy, so i sprayed a perforated pizza pan like the 1 below with pam and threw on bout 1# for him... threw some pellet grill pellets in a smoking tube and let her up on the campers gas grill... with the grill off, i smoked the fish for an hour or so, then lit the grill at the end to cook it... with just a little of the home made spice we make, the smoked fish was a real hit... we smoke a lot more now and deep fry a lot less...

Fish tacos has really become a favorite in our house. Lots of ways to make your own with what is on hand and my girls like building their own, seems like when they make their own they tend to eat a lot more

I just tried this soup recipe and it was delicious

Decadent Walleye/Bacon/Wild Rice/Cream Soup

  • 1 Medium Onion
  • 1 Carrot
  • 1 Stalk Celery Diced
  • ½ Cup Butter
  • ½ Cup Flour
  • 1-½ Cups Water
  • 3 Cups Chicken Stock
  • ¾ Cup Diced Bacon, Ham or Canadian bacon
  • Walleye fillets cut in small chunks
  • 1-1/2 Cups Cooked Wild Rice
  • 1 Cup Shredded Cheddar Cheese
  • 2 Cups ½ & ½ Cream
  • Salt & Pepper to Taste
  • Hot Sauce
[FONT=&quot]Sauté onions, carrot and celery in butter until onion is clear, add flour, cook 3-5 minutes.[/FONT]
[FONT=&quot]Using a wire whip blend in water and stock.[/FONT]
[FONT=&quot]Bring to a boil stirring constantly.[/FONT]
[FONT=&quot]Reduce heat, and add remaining ingredients and simmer for 20 minutes.


I also made some baked walleye the other night...

parmesan crusted walleye

preheat oven to 400 degrees

melt a bunch of butter (1/2 cup on my case)
pat the fillets dry and then chuck them into the butter
pull them out of the butter and then coat them liberally (you don't have to vote for hillary) with lemon pepper
place in a baking pan and bake for 15 min
pull them out and cover them with parmesan and bake for another 5 min[/FONT]

I like to put walleyes or perch in a glass 9x13 pan with a little olive oil in the bottom, put salt n pepper on them then some thin sliced onions, a little butter, then cover them with parmesan cheese and bake them at 350 until done. Usually broil them for a minute or two to brown the cheese a little.

We eat a lot of fish tacos too, my simple recipe...
Cook your fish using shore lunch oven recipe, make a white sauce consisting of a 50/50 mix of mayo and plain Greek yogurt (oikos), mix this with lemon juice till slightly runny, add cumin, oregano and ceyenne to taste.. capers and jalepenos optional.. I like to get a little burn on my tortillas in a cast iron skillet..
Top with cabbage an whatever else u want..

^^^ This reminds me that I made a chipotle sauce the other night for our Pike tacos. made it on the fly at the last second so here is a list of what went in it, all to taste.
50/50 ish of mayo and sour cream
chipotle powder
roasted garlic powder
smoked cumin
touch of white wine vinegar
touch of honey
salt and pepper

I think I'd have to get really sick of eating walleye/perch to smoke them! But no I've never tasted it
