Venison jerky rocks!

I turn about 30 lbs of whole muscle into jerky each year. Good stuff!

My last 3 batches I have unfortunately over dried. Not sure how I lost my touch, but I am very unhappy about it.

I use my Bradley on the Jerky, as I can get so much more in it then on the traeger.

Flavor, and amount of smoke are right, but just too damn dry.

How long are you guys leaving it in smoke, and what temp?

Run the jerky through a coffee bean grinder and it comes out like chew. That's what this toothless old fart does.

I throw the over dry stuff in a zip lock and sprinkle it with a little water or soy sauce and throw it in the fridge overnight, Two wrongs make it half right.

Yeah, I have done that too, with a wet paper towel in the bag just zip it shut for a day or two in the fridge, and it comes back a slight bit moister...haha
