In the 2nd pic, what manner of nourishment is over the bacon and under the Tatanka dust?

Yes it did.............I smoked it for an hour, then turned the heat up to about 225. In around three hours two probes showed between 165 and 170. I wrapped it in foil and a towel then put it in a cooler and took out to my daughters place. It was close to two hours later when we ate. It was about perfect...........still plenty warm but yet the cheese didn't run out when I sliced it.awesome, did it all cook evenly?
