venison osso bucco?

The older i get the more i try to do more things with the deer i harvest than just the traditional (sausage, summer sausage, etc.). Venison osso bucco is on my list of things to try. Have any of you guys cooked this? if so please share your results, thoughts,

I've never had good luck with any preparation of venison in which bones remained. I'm all ears if you find something good though.

I am not a fan of any venison bone in cuts. I think marrow and bone from deer has a bitter flavor. I also don't care for any fat on venison which includes moose and elk.

I do that with neck roasts. But I'm nuts due to prion risk.

You could bone out the rear quarter, save the bone, fillet off the neck roast sans spinal column and then tie it to the aforementioned femur...........
