HELP!!! Redeye and Apple Pie

The guy who always makes the redeye for everyone else's weddings is getting married this weekend. I just realized no one made redeye for his wedding. I need to make a few liters of redeye or apple pie ASAP. Anybody care to share their recipe/methods? I've never made it before.

Two gallon Apple cider
two gallons apple juice
2 1.75 everclear
6 cinnamon stick
6 cups sugar
heat cider and juice up with the sugar and cinnamon sticks enough that the cinnamon sticks open up and sugar is dissolved let cool add everclear and bottle put in fridge


two gallons water
1.75 everclear
10 cups sugar
4oz rootbeer extract
1 oz vanilla extract
heat water and sugar until sugar dissolves add rootbeer and vanilla let cool add everclear bottle and cool
this will fill twelve quart jars leaving a little for tasting

Thumbs UpYup, I use a similar recipe for apple pie, just make smaller batches. I also only use about half the sugar (3-4 cups if I was making a big batch, and also usually use a combo of half sugar half honey or agave syrup). I prefer apple pie a little less sweet, but just my preference. It is delicious and there isnt a Christmas or big family gathering that doesnt have applie pie involved.

The root beer one sounds really good. May have to give that one a try. This one is also really good if you like Kahlua. (also use a bit less sugar). Need to let sit for a couple of weeks though. Same with apple pie, but can make in short order and still will be good. Just not as smooth.


  • 24 cups of strong brewed coffee
  • 4 pounds light brown sugar
  • 1.75 L everclear alcohol
  • 3/4 c vanilla

Instructions

  • brew 24 cups of strong coffee.
  • pour coffee into a large stock pot and bring to a boil.
  • add brown sugar and stir constantly for 5 minutes.
  • remove stock pot from heat and cool.
  • once cool stir in 1.75 L everclear.
  • use a funnel and pour into bottles

Wedding Schnapps (Red Eye)

I grew up watching my father make this recipe. He taught me and I have taught the next generation. It was served at my first wedding 32 years ago, but seemed to be a forgotten tradition until I began to teach my nieces and nephews about the history and uses of schnapps. Since then, it has been served at their weddings with a little history lesson preceding the first toast.
Wedding Schnapps
1 Liter 190 proof Everclear
2 cups white sugar
5-6 cups hot water
Melt white sugar slowly in sauce pan (or electric fry pan). Stir it constantly so it doesn't burn. Brown the sugar to a nice amber shade (about this time you will notice the caramel scent.) Slowly add the warm water and stir until well blended.
Using two empty liter bottles and the everclear bottle, separate the liter of Everclear into three portions. Add enough of the sugar mixture to fill the bottles. If desired, add flavorings. Cherry and licorice/anise seem to be the favorites. I'm a purist and don't like to add anything to an already wonderful product.

Can't go wrong with some burnt sugar taste like Kool aid or get some jungle juice in a large watermelon. Cut a hole big enough to mash up inside, add favorite alcohol some 7 up or some ginger ale. Set in a large cooler with ice and Allow to soak in the watermelon add a tap about 1/4 way up the side, bigger the watermelon more to go around. I would bring this every year to spring fest in university Park in Grand forks. Very yummy

Doesnt the chunks of watermelon plug the tap? Im thinking a ladle might work better....

That is a good suggestion I used a plastic outside faucet with a 3/4 " outlet and also this was a big watermelon. Small dixie cups cuz these are mixed shots yummy
Also just remembered the watermelon inside would turn to pulp after awhile, the hole that is cut out can be used to tip a bottle of your favorite liquor (vodka, ever clear, bacardi, or etc.)

Nah I just used a mixing spoon, I was worried about crushing up the seeds but The honeys loved that stuff never had enough to go around but just like a center piece on the table it was away to spark up conversations GOOD MEMORIES
I bet a good wand blending stick (immersion blender) would make short work of the inside of a watermelon :;:thumbsup

I guess it could work on mixing but you seedless watermelons are not technically seedless just sterile still have white seeds

The redeye recipe on the NDSU site is the best. I don't like to mix any flavoring. Mix it a little strong and serve it very fresh or over the rocks for the best results.

my wifes grandpa would make that he called it burnt sugar. a couple nips of that would warm you up on a cool day

How brown do you prefer the sugar to be, for those of you who have made this before.

Liquor is cooking.

2 liters apple juice
2 liters apple cider
1 liter everclear (will be added once juice comes off a boil)
2 cinnamon sticks
1.5 cups sugar
1 tspn apple pie spice (found it at the store. Smells like pie.)

the NA mixture is currently heating on the stove in my big kettle. I'll add booze after bringing it off a boil. I usually use this kettle to boil the cosmoline off old gun parts. Who knew big pots could be used for cooking?!

When you mix up the items of the recipes it's best to use distilled water and not tap water, especially if you don't consume 100% of it and some might remain bottled. Otherwise, you'll have some creepy crawlies floating around inside the bottle after some time.
