A Japanese sushi entrepreneur paid a record US$3.1 million for a giant tuna on Saturday as Tokyo’s new fish market, which replaced the world-famous Tsukiji late last year, held its first predawn new year’s auction.
Bidding stopped at a whopping 333.6 million yen for the enormous 278kg (612 pounds) fish

If the fish dressed at 500# that would be 3875.00 per oz by my figuring, could be wrong.

I could also be wrong as I got $387.50/oz. Either way I cannot imagine how you could possibly sell the sushi at a profit. At least with sushi you don't have the expense of cooking the dish. Add in this, I think a finished weight of 500# from a 612# fish is pretty generous. The head alone might weigh 100# or more. I've never checked but I don't think I come close to getting 50% edible fish from the whole fish when I clean them. Maybe if I had a SKINZIT could.

Skinzit is a strong yes with 7 figure fish. If there’s a market, somebody will oblige.
