I'm really not sure I can sense sarcasm any more on NDA, but I'll play ball.

Duck is my favorite meal. We actually save all our duck for special occasions and I limit consumption to once a month so we can make the meals last until the next hunting season.

It's one of only a handful of meals where my kids -- 5 and 3 -- ask for seconds. The other meals are hamburger helper, tacos, pizza and Mac N Cheese.

if we're being honest duck isnt the tastiest critter. If you forget and that meat gets passed med rare it tastes like a big chunk of butt hole

Spoonies and other plankton feeders - not so much.

Plankton eating ducks are icky IMO.

Duck (mallards, gads, etc) is also a favorite of mine... both wild and tame.

I bet flamingo blows.

You need to learn how to shoot better if you can only hit enough to supply a meal once a month. ;:;rofl

The wife's grandpa and I used to string nets across the White river in Arkansas and catch what he called Buffalo, I called them carp. Some he would clean and roll them in seasoned corn meal and deep fry, they were good, some he would clean and smoke, they were great. I can remember climbing the hickory tree in the yard to get the wood for smoking. Was fun times going down there.

I hear flamingo is very tasty. I have never tried it. But a guy I know says it was like pink pheasant.

I have never ate paddle fish but the pictures I have seen of the stuff KDM has smoked I would gladly try his.

I started out liking paddle fish, but the more I ate the less I liked it.

I used to be big into aquaria... which meant collecting freshwater daphnia and associated “plankton” to feed fry.

I know the smell well... and I got a hint every bite of that paddlefish

Oily... planktonesque flavor is not my cup o tea... not even a slight degree.

I’ll eat damn near anything else though.

6 ducks/meal x 12 months = 72 ducks. If I brought home 12 limits of ducks a season, I'd be tickled. So I exaggerated. We probably eat duck once every two months at current capacity.

I used to feel that way, but I mix up all the breasts and I honestly can't tell the difference. Maybe it's the marinade we use?? I'm not sure.

Plus bacon. Bacon always helps.

I prefer no marinade. Dabblers don’t require it.

We used to do blind taste tests. Back when good duck hunting wasn’t a three day event.

I tried it twice. Gross both times and I generally know my way around preparing fish.

Maybe I got bad pieces?


In my experience with them (probably 40-50 fish over the years), the smaller ones (<35 lbs) are by far better table fare, but all are good so long as there isn't even a hint of that stinky, absolutely foul tasting, pinkish/red-brown meat attached to them. And by that latter statement, you can't even freeze your filet with any of that crap attached to it as it will taint the delicious white meat.

If done properly, the only comparison I know of is sword-fish.

It took me a few fish and several years to learn the importance of trimming it up before freezing it. I've tossed away my fair share of paddlefish to gain this insight.
