The outdoors edge knife kits are not too bad. I have processed a few animals so far with it and still haven’t resharpened. I think I paid like $30-40,

You need to get them on a steel or set of ceramic sticks ASAP or you really will have to SHARPEN them rather than just touch them up.

Debone with any old buck knife and trim and make cuts with any old fillet knife. Same fillet knife for birds.

Butcher shops change out all their knives every so often. Look on Ebay and you can find lots of butcher knives on there really cheap. I think I bought a dozen victorinox boning knives for $14 a couple years ago. You will spend more than that on one good knife buying new.

After de-boning all you need is a GOOD SHARP Fillet Knife.


Not sure if some didn't read this right.....AFTER the meat is off the bone.....After.......then all I use is a sharp fillet knife.

my bro in HI swears by the Spyderco sharpeners - he's kind of a knife freak

he's the type that's not happy if it doesn't shave arm hairs easily

I use the Work Sharp and a butcher's steel for maintenance

I am NOT a knife guru
