back when i was a frequent bar attendee i lived off pickled eggs and sausage. I dont have a recipe but if you find one i would not be opposed to making some.

My mother-in-law makes it! It is awesome... don't sell yourselves short guys.. it is well worth canning and ready to eat out of the jar. Sorry i don't know her recipe or the process, but the end product is delicious.

I don’t know that I have been in a small town bar in nd, sd , wy or mt that does not have a good jar of pickled sausage

I had to substitute by dipping pork rinds in super secret filipino hot coconut vinegar until I make some.

I believe this recipe came from Dakota Country magazine: Pickled Polish Sausage (Kielbasa with Occie)

2 1/2 cups distilled white vinegar
1 1/2 cups water
1/2 cup sugar
2 large onions-sliced thin
2-3 cloves garlic
1/4 teaspoon allspice
1 medium carrot-peeled & sliced 3/8 "
1-2 bay leaves
1 1/2 - 2 teaspoons dry red pepper flakes
1 teaspoon black peppercorns
Put all above into pot & bring to hard boil. Reduce heat to simmer until carrots are tender, then shut off & let cool.
Fill sterile jars with 3 " chunks of Polish sausage. Fill jars to 3/4" from top with strained, cool above liquid, seal & refrigerate at least 48 hours (1st 24 hours have jars upside down on lids, than invert to right-side up for remainder). Keep refrigerated til gone!

Been making pickled eggs, getting it better every time, last batch was good, they are tasting like bar eggs now

This is a Franks Red Hot recipe I've wanted to try on eggs since last winter but haven't yet.

I'm assuming you have to cook your sausage before pickling right?

I suppose maybe a canned pickled sausage recipe might be good

Small town bar I frequented in my youth had pickled polish sausage. I'd have the bartender put one on a hot dog bun and nuke it for 20 seconds and then drizzle nacho cheese on it. Makes my mouth water still.
