Anybody got a good pickled sausage recipe?

I’m up to my armpits in sausage and want to pickle some of it.

Sounds good to me,most small town bars have pickled polish sausage,turkey gissards,pigs feet all taste damn good with a cold brewski.

Pfft... and I thought Germans from Russia hung out here.

I found some Penrose Hot Sausage knock-off recipes. Will try those.

Never heard of such a thing. However, in the few experiences I've had making pickled meats, fat was always the nemesis. Fat doesn't seem to pickle very well due to the pickling solution not being able to get into the fat. With that in mind, you may want to find or make some very lean sausage before giving this a try. I know how much time, money, and effort goes into making sausage. Be a damn shame to have something unfortunate occur and it be lost. Good luck!!

Love it. Although I have no recipe. SD seems to be into it as its all over down there. Frohlings in Hecla makes some great pickled sausage.

Let me know if you track down a good recipe

I’m overstocked w venison sausage. 60/40 venison/boston butt. Quite lean.
Every convenience store has a selection of pickled sausage. :)

You guys need to get out more.

I had pickled sausage for the first time this year. It was the bomb!
I'll see if I can get the recipe.

October fest in december? good idea,got about 30lbs of snow goose link sausage my dog won't even eat,I'll donate but he's kinda picky,tried to feed him some nasty old speed goat roast from nebraska we couldn't choke down,must be the sage diet down there?,cut it up for my pup after a long day in the field,we ate salad,my pup sniffed the lope and pissed on his bowl of roast,darnest thing I ever seen.
