Spring gobblers

A wild turkey provides great eating too. You can roast it just as you would a domestic bird, charcoal it, panfry it, do it in hot oil in a turkey fryer...or you can try this recipe. A delicious concoction called a turkey melt. When I first moved to Bismarck my office was next to the Prince Hotel. On the menu in their restaurant was an open boat turkey creation called the “Hot Prince” This is my attempt to replicate that dish.
One meal for a single serving:

Ingredients

Three slices wild turkey breast
Three slices Swiss Cheese (or substitute the 4 blend Mexican cheese which I always seem to have on hand)
Six asparagus spears
Flour
One oz. Olive Oil
One half cup Shitake mushrooms
One oz. Port Wine
One oz. Sweet Marsala wine
Two tbsp unsalted butter
1 slice of sour dough bread

Preparation

Using a meat mallet, pound the turkey to uniform thickness, then lightly flour it and brown quickly in a pan containing the hot olive oil. Heat the pan before you add the olive oil, a little trick that will prevent sticking.

Brown the turkey quickly, but be very careful to not overcook it.

Remove the turkey from the pan and set it aside. Add the shitake mushrooms and saute' them quickly, then add the Marsala and Port wines. Be careful here since the alcohol will likely catch fire. Deglaze the pan with the wine sauce. Finally, finish the sauce by melting and incorporating the butter.

The rest is easy. Place a slice of the bread (toasted if you like) in an individual, oven safe ceramic boat. Add a slice of turkey then layer with a slice of swiss cheese, then aspargus, then another slice of turkey breast, swiss cheese and aspargus, and so on.

Place the boat in a preheated 450 degree oven for about three minutes, or if you have a convection oven, about a minute until the cheese melts. Then pour equal amounts of the shitake sauce over the top of each

man oh man camper as good as your recipe sounds,to much work for this old fart,usually deep fry(skin on__) or smoke,last spring I laid out two tom's same day one deep fried the other smoked on the weber 22"grill,(skin on) peanut gallery claimed the weber won the contest. brined both with kosher salt/brown sugar.

Who all filled their tag already today?

My 10 year old filled hers at 1:00 pm yesterday after an awesome sneak with my good buddy and my 7 year old in tow and with the help of just a dried turkey fan as a decoy when nothing else would lure them in. Popped up the fan and without hesitation a jake peeled away from the rest of the birds and waltzed right in. At 15 yards my daughter let him have it with her little .410.

What a beautiful day sandwiched in between two crappy weather days. I was receiving pics of other youngsters sitting behind their turkeys all day so it was about as fun of a day as a guy could hope for.

Had an awesome weekend with my daughter. Saturday she passed a bunch of Jake’s in the decoys. Saturday night 6 big toms came in just out of her comfort range with the .410.

Sunday morning we had a big strutter come into 4 yards. Apparently it was too close because it was a swing and a miss.
Yesterday afternoon we had a few strutters come running into the decoys. They were gobbling, strutting, drumming and the whole 9 yards. She picked out the biggest and stoned him! She was/is so pumped!

In addition to my daughter's turkey, I was able to tag 4 gobblers and a Jake and my turkey hunting buddy tagged 3 gobblers and a Jake. Excellent spring season all around, but my daughter’s hunt was the highlight by far.

I got to tell ya man, GREAT job with your daughter and her (first?) turkey. The pics are fantastic. Just the fact that you are getting her out there to experience it is awesome and her excitement is obvious. I’m going through the same process and can’t imagine not being able to enjoy the reward of seeing my daughters so proud of their accomplishments in everything, but there is something special about watching them work at having some success as their interest grows in hunting. My daughter started with a miss last fall too, and to be honest, I wouldn't change it at all. A couple weeks later when she got the chance to redeem herself, she did and her excitement level was that much higher for it while her first turkey was flopping around on the ground.

I get some of those “you’re a good dad” comments from people who witness my kids and I interacting and there isn’t a better compliment a guy can receive.

You deserve one of those compliments as it’s obvious to see you are doing a damn good job with your kids. You should be proud. Keep it up and good luck on all of your future hunting and parenting adventures. In a world gone crazy it’s the kind of stuff that reminds a guy what life is really about.

Thanks dirty. I love doing hunting and fishing things with my kids! My daughter had to bring the beard to school Monday. Ha
My son shot his first beaver last week. I have that fleshed and stretched for him.

A guy can only have so many turkey fans around, so when I found this online I figured I’d save some wall space and do something a little different. I’m filling it up with the longest beards I’ve collected. This is every gobbler I’ve shot with more than an 8” beard. 3 to go before it’s full.

I agree Dirty, only so many turkey fans a guy can have. I made a little display for the beards and spurs that takes up a tiny space the beards and spurs deserve some recognition!
