This recipe isn't for 50 geese or 10 or even 5. That number need to be trimmed of any shot up shit, rinsed and tossed in a sausage bag. But, if you ever find yourself with a couple of whole breasts not shot up:

Trim silver skin, soak in salt water a few days, season well, marinade a few days, wrap in bacon weave and cook to medium rare. Normally, I would sear first and finish in oven. But, I was short on time. So, I just did oven this time. Results are fantastic. My chef brother in law and my family devoured it.

Hard to beat,bacon wrap duck,goose sharpies,chickens etc ,bacon wrap,bonus is adding a sliced water chessnut,or a sliver of a chili pepper.

after many years trying different wild game marinades,I'm convinced if one has the time a good 24hr bath in coke,to draw blood,tenderize and sweeten the meat (diced) then another 24hrs in a dry rub of choice,then as grill is prepping enter morrsels in a pool of teriyaki for 30 minutes or so before bacon wrap,Advancing forward I found the super thin bacon to wrap meat can be stretched around meat chunks,no tooth picks required,live and learn,besides last time no tooth pick's.

I have an recipe from I fella to make goose slim jim snack sticks, but I think he forgot to list what other kind of meat or how much to mix in. With goose being very lean, I would think like adding 5 lbs. of pork to the 10 lbs. of goose. Or even adding 5 lbs. of 80/20 beef. Am I wrong, but doesn't a guy need some pork or beef fat in the sticks????

Those look great MossyMO!! Have you ever made the goose pastrami? Also seen people talk about it but never have made it.

There is no way in hell (other than a starvation scenario) I could overcome my gag reflex to eat poultry cooked to "medium". I have a throat of normal depth and have never "done" Dallas TX.

That is all.

medium is over done and their not poultry unless they are tame.
