I gotta a freezer full of lake trout I gotta get rid of before our Duluth trip. Does anyone have any favourite recipes? I've only ever smoked it before, and I want to try something new.
Could always keep it simple, bake it with a lemon zest and a light parmesan crust. That sounds delicious I’ll give it a shot when I have timeThaw, dump copious amounts of peppercorn ranch dressing on the meat, and grill skin side down until the edges of the skin are burnt black. Shovel off the meat from the skin and consume with favorite sides and cold beer. Good Eatin' right there.

l’ll see, the family loves it so much more matter how big of a batch I make it’s gone in a half hourSmoke up batch and share? I would be a willing taste tester
Been doing some experiments on salmon from Sak and found a few different seasonings coupled with a sauce at the end on the grill/smoker or oven to be good. Favorite is Meat Church Texas Sugar or Holy Vodoo and some Big Wicks Peper Jelly.
Lake trout are on my bucket list for sure, especially through the ice

Texas Sugar has a little more heat than you would expect. I wouldn't call it overly hot but it does have a nice kick, the name is deceiving. Holy Voodoo is more of a Cajun kick.And yeah some of those sweeter seasonings would be delicious![]()

Yes that place is good. Brine overnight in fridge: 1c kosher salt, 1c table sugar or 1 1/3c light brown sugar to 1 gallon warm water to disolve...cool down. Fish fillets (skin on) submerged well.
Make a paste of water, Frank's hot sauce to taste, brown sugar& lemon pepper.
Skin side down on med-low heat grill til flakes well. Slide meat off skin & enjoy.
Note: if skin is off the fillets, grill on HD tin foil or pizza stone

It's tough to beat West Dakota Meats in Bismarck for there smoked Salmon. They have smoke alot of my Salmon thru out the years.Thanks for the Russ Kendall’s recommendation we stopped there got some smoked salmon and cheese curds, probably the best smoked salmon I’ve ever had![]()
