Message: <blockquote data-quote="Maddog" data-source="post: 359727" data-attributes="member: 5355"><p>I have had good luck with steaming them.  Start with cold water putting the eggs in a steamer basket above the water.  Leave over heat for 15 minutes after it starts to boil.  Then quench them in ice water for 10 minutes.  Saw this on a cooking show.  It is the only way that I have tried to date that always allows me a good peel.  LOL  Other ways are hit and miss for me.</p><p></p><p>And then to peel.  I just crush the flatter end of the egg and one side.  Then peel larger pieces.  IF I do the earlier way of rolling the entire egg to crush the shell, I often times would end up with shell pieces that wouldn't come clean from the egg.</p></blockquote><p></p>
