I add a tbsp of cayenne to a store-bought jar and let it sit for a week or so. I've had homemade spears with a non-insane amount of habanero which were delicious and did not trigger the Elvis nerve upon ejection. Not a fan of green bell peppers: 😑

I made a pickled carrot/kohlrabi mix.....dilll, vinegar, and orange zest/lemon juice to make a citrus flavored pickled crunchy mix. BIG HIT!

Not exactly "bread and butter" pickles but a fun twist that's sort of sweet!
