Update :  After smoking the bigger peices were still moist and I wanted to dry them down so put them in the oven with the light on,  by the next day they were already rock hard with crunch like corn nuts only with bones.    Covered them with Sweet Baby Rays and pressure cooked them like regular fish.  No bones and the BBQ sauce hydrated it back some and it's tough .    It happened by accident but it turned out to be some of the best jerky Iv'e made and the last batch went fast.
