Our family tried something a little different last night. Took a deer loin and seasoned it and seared it quickly on each side. Wrapped the seared loin in prosciutto,and wrapped it to put in fridge to cool. In the meantime took a couple kinds of mushrooms diced finely with onion,garlic, and thyme with a little red wine. Sautéed that until it was reduced down. Had some pastry dough rolled out and spread out the mushroom mixture on the dough. Brought out the deer loin and layed it on the pastry and rolled to the edge. We then brushed an egg yolk wash on the edges to hold together. When it was rolled into a Wellington brushed the whole thing with the egg yolk and baked it at 400 for a half hour. If we were thinking clearly we would have taken a couple pics but we just devoured it instead. Definitely will do this again. Delicious!

Mom got it at hornbachers in fargo. Said there wasn't much left. We actually made our lutefisk in the microwave this year and it turned out really good. Dad and I pretty much pigged out on it, Norwegian tacos are awesome (lefsa with buttered and pepper lutefisk )
