i know it's early, but wth...

we're gonna have a smokey easter this year, and looking for some sides to go with it... gonna make some pulled pork on sat cuz of time (10-12 hours to smoke - i like it better the 2nd day anyway), then smoke a couple splayed chickens and some ribs on sunday for the 2pm spread...

thinkin maybe some home made baked beans and scalloped potatoes for sides, but looking for ideas...

what would you match with the "smokey easter vittles???

Here is a super secret family bean recipe (well it was until now) ;:;rofl. 1-32oz can of baked beans (we use Bushes), 1-16oz can of pinto beans, 1-16oz can of great northern beans, 1lb hamburger, 1lb bacon, 1 onion(chopped), 1/4 cup brown sugar, 1 cup ketchup, 3 Tbsp. vinegar, 1 Tbsp. liquid smoke.


Season hamburger to taste, then brown in a frying pan, fry or bake bacon (drain grease) then chop or crumble up, in a slow cooker/crockpot add all ingredients together and cook all day long. Enjoy!!

Sounds like a feast fit for a king Raider. The older I get the more I like cooked vegetables, Creamed Cabbage comes to mind with that feast. Tikkas baked bean recipe sounds good too. Darn tootin

missed the slaw, nice add there... we have a home made bean recipe that is close to tikka's that is awesome...

the creamed cabbage sounds awesome 2...

i love holidays, even if it costs me a few #'s...

I smoke my meat on a weber with a double grill set up and coal rails to keep the briquets to the side/indirect. I use aluminum foil on the coal rails to keep the side radiant heat down (don't burn the beans) and get my beans ready the night before I smoke the meat (brisket, pork or chicken.) Then when I smoke the meat I put the beans under the meat and slice the foil so the juice runs into the beans and I also stir the beans every hour or so. I leave the beans in for 4 - 6 hours and it makes for great, smoked baked beans. You can keep them warm in a slow cooker until needed to serve.

Beans and grill ready for brisket.

Well, I guess we are also going away from the traditional meal of turkey and ham. Will be cooking 4 beer can chickens on the bbq and 5 or 6 racks of baby backs on the smoker. :;:rockit

jalapeno corn bread in a cast iron skillet!

Line skillet with bacon, cook about half done then add the corn bread batter and bake as usual. It's like pigapple upside downcake

If you have any Steven Raichlen books, he has a recipe for bbq cabbage. I made it a couple times and it is pretty tasty. I also like beer braised cabbage with bbq.

Wife is in Minot with her Mom, so I'm going over to my neighbor's. He's Jewish and his step-daughter is Japanese, so I think we are having pink chicken!

Figure I better update since I planned Easter dinner based off of this thread. For the main course I went with a brisket.(another thread). Got it ready to go. I'll throw it in the smoker after the hockey game tonight 20180331_155647.jpg

For the sides we're doing Tika's bean recipe, the jalapeno cornbread in the skillet and the wife is going to throw together some coleslaw.

Ended up putting the brisket on about 12:30.

I hit 153 at about 8 this morning and wrapped in foil. I threw Tika's bean recipe together and tossed it in the smoker as well.
