Do I need a cure? Is his do able?

Using cure will help stop botulism/food poisoning from happening. For the little bit of work and the minimal expense it takes to add the cure, I wouldn't consider smoking anything without it.

How did you get your handle/nickname?

When I was younger, we used to refer to a big buck as Mongo. The first time I remember hearing the name was the character Alex Karras played in the movie Blazing Saddles. Classic!!
