I used to prepare bison rump roasts, sliced for sliders, at a bar in Minn, using only s & p & strong coffee. It always turned out great, the coffee tenderizing the meat without adding a strong coffee flavor.
I cooked the roasts to 170 F in a covered roaster, then rested them for 20 min befroe slicing. Soo good!!
