    Filet, wash, keep out what you want to eat fresh, dry remaining with paper towel, place filets in vacuum bag laid out just like you would in a frying pan, suck, seal and freeze. Doesn't take long to thaw out, hard to tell that they were ever frozen in the first place. Seems to work for me.

    60 is tough to do, wouldn't totally surprise me, but 6lb average is tough for 2 days. More realistic will be in the 54-56lb range, one or 2 teams will get there, gonna need mid to upper 40's to get top 10. We'll probably go 15 then 24 for a bed shitting 38-42lb range.
