    Everybody has a different tolerance and taste to "smoke". I like heavily smoked meat. My mom and wife don't, so they could probably pick up the subtle flavor more than I. I also know that pellet ovens can vary a lot from one to the other, on the amount of smoke they put out.

    Valid point. My oven is LP, convection. I also use a countertop Breville Smart Oven Air Pro sometimes, depending on what style I'm making. It's an electric convection.

    I've smoked a few chuck roasts for slicing, like brisket, and I can confirm they are indeed very delicious. I feel like they must be easier to cook than a brisket, because I've F'd up a couple briskets in my day, but every chuck has turned out great.
