    Yes, I do freeze the ones I smoke but not the ones I pickle. When I get home from work I will post the recipe I use.

    When I pickle northern, I clean\filet them and then they go right in the pickle brine. IMO, it seems like if you freeze them first they have a tendency to get mushy. I would try fresh caught smelt but not frozen ones.

    Pheasant finger coating

    I cut my pheasant breasts into 3/4 inch chunks and seasoned them with salt, pepper, onion powder, and garlic powder, then put them into the fridge for a few hours. I then put them in an egg wash then I rolled them in this. Then fried them in oil. Turned out pretty good.

    Cranked up the snow blower at 9:30 last night and did the driveway, guessing there was around 8"s then. Fired it back up at 5:30 this morning before taking the wife to work, and cleaned off another 3"s.

    With all the hype over the last three days about this big storm. I was a little disappointed this morning when I got up and thought I would see at least 6 to 8 inches of snow, and we only had a half inch of slush on the streets. Bring on the snow, we need the moisture.

    Pheasant finger coating

    Going to make me some pheasant fingers for supper. I will be frying them in a mixture of 1/2 vegetable oil and 1/2 olive oil. What do you people use for coating/breading?
