I bet some of these nasty fish would taste fine if a guy was to soak them in fresh squeezed lime juice for a couple hours.
Our famous fish tacos use the lime juice method. Superb.
"muddy taste"... ha ha ha. I've had the displeasure of tasting actual mud many times in my day (yard work, field work, hunting, fishing) and none of it tasted as bad as crappy fish do. Who invented that term anyway?
I carry one all the time - and never use it. Rather than try to get the wind to work out just right I just bail on drifting in the wind and try another technique.

Red River catfish are nasty and I've tried them all seasons and many methods. A clear oil appears when you filet or steak them - and even when trying to avoid the oil or remove it - the result is always the same. Tastes fishy/oily every time. Hurl. Even smoking them is lame.

Totally agree - crappie is very very tender and way different in texture but taste is as good as any fish. Crappie is the most tender of all the fishies IMO - sorta like orange roughy.
Deep frying at 365F with a light dry coat (egg wash and corn meal-based "powder coats") achieves excellent...
The crappies and "large sunfish" distaste comments have me puzzled. I guess maybe sunfish and bluegills are different?

Then again I HAVE had bad bluegill from a single lake in SD that tasted like slough. Really strong slough. SO bad....
We tried to eat largemouth camping once. Couldn't choke it down. Other times I've eaten it and it was fine. Must have been the fact we had nothing else to eat that night and destiny thought "hey, these guys need to suffer".
