Highly recommend Michael Ruhlman’s book on charcuterie. I’ve substituted or adapted recipes using umai dry bags and venison. But everything’s turned out excellent. Bresaola and Tuscan salami were my personal favorites.

Well that's what I thought as well but the description doesn't indicate what type of meat is being used so i went with beef but you could be right it definitely looks like venison.I thought it was venison.
