i've never had the pleasure of doing a larger animal. but, i can have a deer quartered and ready in the time it takes to walk back to the truck and drive it out in the field assuming the truck is 1/2 mile away or more. i know there is supposed to be a benefit to hanging them. but, its gotten to the point where that process is reserved for deer worthy of multiple pics and mounting for me.

I'm just familiar with "gutless". I'm Assuming it's not a true moniker and the tenderloins are harvested?..

Absolutely the t-loins are harvested! Just gotta be a little careful with the incision but they come out just fine. Elk are more difficult because their stomachs expand quickly. I have punctured the stomach before during removal to be honest :mad: Whitetails are easy peasy!
