i've never had the pleasure of doing a larger animal. but, i can have a deer quartered and ready in the time it takes to walk back to the truck and drive it out in the field assuming the truck is 1/2 mile away or more. i know there is supposed to be a benefit to hanging them. but, its gotten to the point where that process is reserved for deer worthy of multiple pics and mounting for me.

Absolutely the t-loins are harvested! Just gotta be a little careful with the incision but they come out just fine. Elk are more difficult because their stomachs expand quickly. I have punctured the stomach before during removal to be honest Whitetails are easy peasy!
