That chicken looks awesome and will be doing that in the near future. I use liquid smoke on almost every piece of meat I cook, It's ok in a pinch.

I usually always spatch birds these days when grilling/smoking only cut completely in half,ducks,.chicken,game hens and turkey,90% of the time on the weber kettle grill and cherry wood for a sweet smokey flavor.
