Always liked prosciutto, but rarely buy it, so decided to try and make it. Stage one is in the cooler for 30 days, then hang until about 20%-25% of the weight is lost, seal it up and hang again for another 6-9 months. Let the waiting begin, actually not sure it will be easy to wait that long!!!
