I like to slide some good thick cut hickory smoked bacon under the skin, stuff a whole onion in the cavity, fill the remaining space with stuffing mix, and stick in the smoker at 170-190 for 5 hours or so.     tator tot hotdish is my absolute fav for those types of meals, but it's hard to beat a good bowl of chili on a crisp fall/winter day. Especially when I have cheese, fresh cubed onions, and a cold beer to top it off with.
