    I'm not certain but I don't think the Easterns are what is here in ND. Think you would do better with Merriams. In any case, be careful what you wish for with turkeys. Never met a landowner that likes having them.

    Whole meat venison jerky

    I know you guys like your consistent thickness but honestly I just eyeball it with a sharp fillet knife and I think that is consistent enough. I doubt Neanderthal man cared that all his jerky slices were exactly 3/16" thick.

    If you are going to spend the dough, get a two way so it tells you the vehicle is started. And no, they are not easy to install. When I worked at Oreilly's, I think I returned the same one three times because a guy would get started and realize it wasn't worth the effort.

    You need to at least double the concentration they say to put on the meat I found.

    I didn't weigh it but I'm guessing it was 6-7lbs ish. I was winging it. The key is to use enough brine to get all the meat submerged. I just used two big tupperware containers.
