    Somehow you have to keep the meat cold while working with it - like in a cool garage, on cold stone countertop, or whatever. I've worked with other italian sausages etc. that got screwy because they warmed up and the fat went clear and greasy. Lame!

    I should test mine. WITH ACTUAL WATER FROM A HOSE OR SOME SUCH - not just listen to it "run". My boat's so watertight I never get a drop in the bilge unless I spill a bucket or it rains or some such.

    I've never been one of those "your brand sucks cuz it's not mine" guys so can't really relate to the fervor level :;:howdy I wouldn't have bought another Ram had the first one disappointed me.
