I have done a bunch like this and there is never any left. I have a I device thermometer that books by blue tooth to my phone so I can watch temps at all times. I pull at 202 and place in a couple towels in a cooler for a few hours when it comes out of there it is slicing and ready to go with the burnt ends I make up to be done right at the same time.
