I sneered and jeered in the 00's and remained a "damned hip splitter": You TOO can be like "Richard" and "Greg" (whom could do this with fillet knives): This is an efficient/clean process which doesn't waste/dry meat and better deals with the bladder: IMHO; you'll also get more "respect" at the processor. Greg could dress a squirrel to where you thought you could eat it raw:

SHARP knife and "core" the pelvis. The saw's path should be free from hide/hair. I also believe I'll pass on the "seasoning leaves roll-over" in favor of letting gravity evac the leftovers out through the cored pelvis.

I use the gutless...5 minutes max and its ready for the cooler. I do carry a small saw for easy access to the heart though.

I had a wise grey-beard from NDA teach me the "no-pelvis-split" method and then advised to hang the deer by the pelvis to avoid putting stress on the hams. I'm no expert, but man did this work well. And the buck weighed 200+ field dressed.
