I have been vacuum packing that breakdown for years, but he sure is faster than I am. I like freezing those larger pieces which let's me decide what I want to do with them later. They eye of round always gets grilled with salt and pepper usually only, more rarely with bacon. With a bow shot bled out deer the eye of round is lighter colored than beef.

When we had extra deer tags I always took the larger chunks of hind qt and vac packed. You can always grind or make steaks out of roast size pieces, not so much the other way around. LB
