We dehydrate many of the peppers we grow and use them in stir fry, rice dishes, and the like throughout the year. They keep their flavor very well and rehydrate before the rice is cooked or the meat is done most times.

We are going to try planting some Jerusalem artichokes this year in some out of the way places. Should be a fun little trial. If nothing else, they should make flowers for the pollinators.

And mind you, I consider myself a pepper lover.
I don't have much space so many plants are given away. It's one of those things where I started with a reasonably number and have added more and more plants every year. I have a hard time picking just a couple varieties. Biggest hassle is moving plants around to harden them off in May. It's worth it to not have friends and family overpaying for thin leggy plants.
I dice and freeze the majority of peppers, they seem to disappear quickly that way. We also make a ridiculous amount of salsa

What would a person do with the produce from 100 pepper plants, of any variety?
I have a vegetable stand in August and September and what I dont sell I give to family and friends, so not much left when I get done. LB

We make salsa, ketchup peppers, homemade vegetable juice, put some in our pickles, pickle some jars with just peppers, eat some fresh, and dehydrate the rest and grind them with a pepper grinder to make a dry shake for pizza and eggs and the like. All that with like 16 plants. That’s awesome LB
