Green Onion/Feta Cheese Ring Sausage

Made up some green onion ring sausage with Feta cheese in the mix, half the batch for fresh and the other half of the batch we smoked.

50/50 pork/buffalo on the second grind with the seasoning and cure.

Stuffed in 32-35mm natural hog casings.

Just after being smoked.

This ring sausage has incredible flavor, we’re thinking a smaller casing for brats with Mozzarella/Cheddar cheese!

Fresh ring sausage just off the grill.

I just made some sausage. Canada Goose 50%, pork 25%, 5 pheasant, one partridge, and threw in some elk arm roasts that were tough. Mixed 2 batches with cheddar cheese and two with pepper jack. It tastes like dry braunschweiger.

I would like to trade for some of yours. (laughing)

Yum!!! The feta, stupid question but just don’t know, is it high temp cheese?

Not a dumb question at all. It was not high temp cheese. Too my knowledge high temp cheese is not made in Feta, but if it is I would want some!

tried a few of the brat seasonings this year and man are they good! way better than any store or meat market brat I have ever had!

Man that looks delicious. Never tried feta cheese in sausage.

I just took a liking to feta. Called it fetid cheese for a decade but kept eating it out of stubborness. There are so few things that I don’t eat the remaining few kinda piss me off so I force myself to eat them.

This Feta was not high temp cheese.
I have never heard of high temp cheese being unhealthy, but I am off to research now!
