I just put the eggs in my steamer and set the timer for 30 minutes. never have a problem with peeling them and don't have to babysit them as they cook. per a class I took at TAMU the older the egg the easier to peel when hard boiled. the connective tissue breaks down over time that adheres to the shell.

I've always wondered how to get the yolk to be centered in the whites, seem like purchased eggs are that way but my kitchen experience is not the same.

We use zero water. Usually fill every muffin space with an egg and it’s a done deal. Been doing it for years.
That's cool. Sorry: Do you preheat the oven? That should go on YT!

I like to put the hard boiled eggs into a bowl put on the lid and shake, peels the shells off perfect.

I have had good luck with steaming them. Start with cold water putting the eggs in a steamer basket above the water. Leave over heat for 15 minutes after it starts to boil. Then quench them in ice water for 10 minutes. Saw this on a cooking show. It is the only way that I have tried to date that always allows me a good peel. LOL Other ways are hit and miss for me.

And then to peel. I just crush the flatter end of the egg and one side. Then peel larger pieces. IF I do the earlier way of rolling the entire egg to crush the shell, I often times would end up with shell pieces that wouldn't come clean from the egg.

Start the eggs in a pan of cold water. Salt the water. Put the eggs on high heat uncovered on the stove. When the water starts to boil, cover the pot and turn off the heat leaving the kettle on the hot burner. I leave them for 8-9 minutes and then shock them in an ice bath to stop the cooking process. Feel free to leave them on the hot burner for a little longer if you prefer tennis balls to medium boiled eggs

very similar to the steaming method I mentioned

the cooking show said they turn out better if you start with cold water

I boil 10 eggs at a time for deviled eggs. use 6 for deviled eggs and the rest for egg salad sandwiches the next day. Ones that dont peel right or yoke not centered go to the salad bowl. Works for me. LB
