Layered Ground & Formed Buffalo Bacon

Saw this layering method of Ground & Formed bacon and immediately had to thaw some meat and try it! After it was in loaf form and fridged overnight it was very lightly smoked (nieces & nephews request) with hickory and apple. Fridged again overnight before slicing and packaging.

Same great bacon flavor and layered for the bacon appearance!

HOW do you make the layers?

Looks like you have the answer... just individual layers of ground buffalo and ground pork both with the seasoning and cure.

Where did you get the slicer?

Got the slicer from a coworker for $150 8 years ago. It is a Berkel 825E. Wife was upset that I purchased it, she uses it more than me now!

Do you fry it up like bacon? No issues with it falling apart?

No issues at all, the seasoning has a meat binder in it.

So do you split the seasoning and cure into thirds? Then mix like 3 small batches then layer it?

NeverMind I am an idiot no need split up the other meat just the red meat from the pork

Yep, split the seasoning and cure in 1/2 - mixed half in the pork and half in the buffalo. Then just started making layers in the pan.
