You're damn right about cottontail: A birdfeeder and a pelletgun can provide good eating throughout the winter and provide the same frustration as a pile of corn: I'd suggest waiting for a few frosts before harvesting to eliminate warbles. ^^^^The above is no different from squirrel.

I just learned something which applies to the above^^^^ and all breaded terrestrial meat: Dredge then allow for room temp on a rack: Maybe dredge again or don't dredge until the meat is "warm".

Gotta pat the meat dry. Moisture isn't your friend when breading, I've learned. Moisture cooking out pushes breading away.

I usually pat dry, season, let sit a bit, coat in flour mixture, let sit a bit, throw in egg wash, throw in flour mixture, let sit a bit, then fry.

These are traditional metis dish that i grew up to my grandfather who has passed some years ago grew accustomed to eating jackrabbit in the dish. I tried it once like other things my grandfather insisted that I try like the chicken gizzard, or heart and cow tongue and liver all things that are way too rich tasting for me. But cotton tail and pen raised much better
