Indigenous folks of western alsaka(yupik clan) town of Quinhagak are stock piling winter grub already,buddy sent me some pic's of s artifact dig he's on with his daugther,what a great experience,finding hand crafted items outof wood and ivory some dated from the 14th century.

All old school in this small town,very little amedities but having a blast,one shower in town which is just a hose...haha.

I can make great smoked salmon but salmon jerky is mysterious

Ivory fishing lures were likely used to fish through the ice. The lure holes would have been filled with mica to give the lure flash. They are over 400 years old.

I would guess they didn't do it wrong. This was a company in Alaska that turns out thousands of pounds of salmon jerky. The crap was $32 a pound. My taste buds were set for a big treat, then I bit into it. What a disappointment. I thought the same thing as you so at another place with free samples I gathered the intestinal fortitude to try another taste. My taste buds revolted and sent a message to my intestines not to eat this crap. I have eaten salmon raw on some type of Scotch eggs benedict and went back for seconds. Not the jerky.

Even smoked salmon can vary greatly. It’s definitely not all good, in fact far from it. I’m my experience there is only one place in Bis/man that has it perfected.

As far as smoking salmon,today me fav is atlantic salmon and better yet is steelhead (lake run rainlows) reason is the meat is more firm,even chinooks(kings) the fillets are so thick they tend to get mushy,we cut long strips length wise for jerky 2"x 2" and 3-4hrs of 165deg smoke the strips shrink and make perfect jerky.Crank the heat up for more firm meat.

Also the brine,kosher salt/dk brown sugar 12 to 24hrs,then some secret rub,smoke over maplewood for 4-5 hrs,brush a mix of melted brown sugar and maple syrup the last hour or so,let the racks cool to room temp before ya eat and better yet the smoke flavor really comes out after the fish is chilled.

Soy Sauce, Molasses, black pepper, some liquid Smoke and Dehydrate at about 145* until chewy, it's all trail and error

So,this bio my friend started is quite interesting and has great detail and many more pics,he tells me this dig and others along the west coast of alaska will soon be under waterSOD HOUSE.jpg as the bering sea keeps rising this 400 year old sod house they're digging through might have seen its last summer of dry land.
