I'll have to try that recipe. My little addition would be a squeeze of lime, just a squeeze.

I didn't read the recipe but I just did an elk steak chili and didn't need to add any form of fat. Smoke the veggies and seasoned elk steak until the steak was med rare. Diced everything up and assembled the chili. I wanted to finish it in cast iron on the smoker but the weather was crap so the crock pot took over.

For those that haven't watched the video, she uses the flat end of a brisket and several strips of bacon so the finished product definitely has enough fat content.

When the wife and I process our deer all those little slivers of meat right next to the leg bones go into a special pile for chili. Dont get no better. LB

I made this chili tonight. Added a hatch chili and a can of beans to it. Easily the best chili I've ever had.

I'm damn glad you enjoyed it!! You may have a warrant in Texas for adding the beans.

Thats ok, I ain't scared :)

Now we're gonna have to change the saying about texas... turns out the interstate ain't the only good thing coming outta texas anymore....

I made the Meataater recipe over the weekend using elk burger. Pretty decent. Worth a shot in my opinion.
