I visited 3BE and the Butcher Block. I bought tiger meat, sticks and summer sausage and both places. My preference, for all 3 products, was 3BE. Both stores were pretty awesome though. I never did make it to DW Meats.

Also, after my experience, I can say I don't really love tiger meat. I thought it was all pretty bland, and the texture was more like a paste/pate. I thought I remember Kesslers texture being a coarser grind. A shake of salt and Tobasco made it better for sure.

My grandparents owned one of the grocery stores in Dickinson back in the 60's and 70's. They made their own homemade Tiger meat had onions, green peppers, and apples in it. Still have the recipe. Its always good.
I'm also interested, if you can DM me the recipe. I'm excited to try and make it.

Coming in on the raw burger...impressive...might save you from the "How do you like your steak?" question, but won't help you on the rest. 🤣

Welcome!
Thank you for the kind welcome. Posting on a new forum is always a trip. I tried tiger meat for the first time several years ago at an eastern Nodak wedding.

Then I was poking around on Google for recipes and turned up here - still trying to figure out how the forum operates but it appears to have a reasonable amount of traffic/posts to make it worth stopping by and or digging around a bit.
