    I think they're mushy. Do you do anything special? I've heard keeping them on ice right up til the moment you bread/batter them for frying but I guess I've never tried it.

    You can put in an open records request for that data. Unless it's classified (highly unlikely), by law they have to release it. It probably would be raw data that you would have to do the calculations yourself.
