    Seasoning 2-3 days early will make it even better. Reverse sear takes a little longer but there won't be any "brown" overcooked parts around the edges. It'll be your preferred "doneness" from edge to edge.

    Coat (Primaloft puffy), hat, gloves in one of my small Cabelas waterproof roll-top bags for "Winter". Cables, 1st aide kit, triangles, flares, flashlight, safety vest for the "always" kit.
