Are you talking grass finished or steers that just eat grass most of their life till they get finished on corn or grains?
I would surmise that anything labeled grass fed beef, but honestly, I don't know. There were no down in the weeds particulars on the definitions in any of the reports I read. They just said, "grass fed beef" as the main topic of discussion.

Looking into it that’s finished so that’s why the number looks so off as most the beef here is finished in corn/grain as people prefer that but fed grass till sold to feed lot. They sell at higher weights to. There is a couple ranches over here that do the grass finished and it’s closer to venison with less marble and a stronger flavor. If I could get the fat and marble of corn finished with the richer flavor of grass would be perfect.

8’ fences are expensive. Bison are exponentially dumber than cows when you’re trying to move and work them. ~50% weight-to-meat ration vs. beef. No infrastructure is set up to deal with Bison. Stock trailers, gate panels, squeeze chutes, etc etc etc.

Selfishly, more and less expensive Bison leather-goods wouldn’t piss me off though.
Any one that thinks bison are easy have never been around them. They are mean and tear shit up.

Did some diving this morning into the current status of US beef production and came across a fairly concerning little stat on grass fed beef. 85-99% (Depending on which data you want to use) of the grass fed beef sold in the US is imported. That doesn't leave a lot of support for domestic production. No wonder that product costs so much. A good part of the imports come from Australia. Now that's a long supply chain if you ask me.


Australia sells us the real beef and they eat lab grown

When you think of grass feed beef, think of a 6 year old buck at the end of the rut. That would be about right. LB
