I've been getting a lot of bitter ones this year. Not sure why.

My tomatoes are a complete disaster.

Lots of jalapenos, sweet peppers and green peppers.
Not enough water for the cukes and tomatoes. Peppers prefer dryer soil. LB

In a 1 quart jar poke a few holes on the jalapenos pack jar . Add 1 tablespoon sugar 1 tablespoon pickling salt 1/2 cup vinegar add pickling spice if desired. Fill with cold water and cover with saran wrap. Nuke on high for 5 to 6 minutes. Have lids ready in hot water seal and turn upside down for 5 days. Refrigerate and enjoy . Especially by stuffing them with cream cheese and chives.

how my mom made them
Refrigerator pickles


1 cup vinegar
2 cups sugar
1 tbsp salt
1 large onion, or amount to taste
1 green pepper or amount to taste
6 cups sliced cucumbers
Mix together vinegar, sugar and salt and pour over mixed vegetables.
Keeps up to a month, usually use more cucumbers if have more, 4 quart
pail about ¾ full mix well and occasionally as possible, ready to eat
about 8 hours to next day.
I use more onion and green peppers to taste

refrigerator pickles
1 onion
peppers to taste we use red,orange, and yellow
6-8 cups of sliced cukes
In separate container mix 1/4 cup salt, 1 cup vinegar, 2 cups sugar, 1 tsp mustard seed and 1 tsp of celery seed.
pour mixture over veggies and put in fridge. Shake daily. Recipe says ready in 8 hrs but gets better the longer they sit.

just dry them I assume? How do you know they're mature? I assume I know the answer to both, just wondering if there are any secrets I'm missing....

Supposedly late in the season and when they are yellow , Iv'e never kept cucumber seeds but I think my Mom and Dad used to just dry them. I remember my Dad testing germination on seeds before garden season. I saw one trick online where people soak them and let the slime ferment .
As cheap as garden seeds are now days it doesn't pay to save them but it's usefull information to pass on to kids and grand kids incase S ever hits the fan and they end up in survivor mode.

30 years or so ago an old guy probably in his 80s at the time planted his cucumbers from seeds he had saved from the years before said the seeds were from Russia that his mother had brought along when she immigrated here, used to bring some pickles over every now and again and they were awesome, had to use well water from the farm he said

The first batch of cukes that I planted didn't even pop out of the soil.... Middle of July, I decided to try planting some more. out of 30 seed put down, 23 of them popped up... now I'm thinking I'll need to build a tunnel just to get them to last long enough to produce fruits.

Up to 353 cukes as of today. White mold is starting to develop so it won't be long and the plants will be dead.

Made a batch of refrigerator pickle spears, added green, red and yellow bell peppers, jalapeños, onions and used the mix below. I used a 2 gallon bucket. I followed the directions on the packet and poured the boiling juice right into the bucket on top of the above mentioned veggies. After five or more days in the fridge they are ready to eat.

I'm with you, Kentucky. I cannot stand cucumbers unless they're in pickle form.
