As a friend, and more importantly a coworker, I'm going to start a fund to supply your office with Glade plug ins for the winterHaha, this is the first year I have planted that many varieties. Each plant produced a crazy amount of peppers this year, so wasn't expecting so many. But make hot salsa, dry them and either vac seal, store in mason jars, or grind for seasoning, and I made some habanero hot sauce this weekend. I want to try and make some homemade Sri racha as well. Oh and I am going to make a batch of chili just so I can say I made a nine pepper chili. It won't be edible by most humans, but I like hot! Haha

Lycan, par boil them with the skins on until they are about half done ( don't know how long) then put them in cold water. You will be able to take the peelings off just by rubbing them with your fingers. Slice them and put them in freezer bags then into the freezer.
Anyone else grow beets? Ive got a lot an not sure what to do with them, I think they are more prone to mold in storage than carrots are? Was thinking about boiling them and then slicing and dehydrating for later...
