I like mine deglazed in the leftover steak drippings and red wine. I posted the vid as the "third step" was news to me.

If the pan seems a little dry at first, I'll add a pat of butter. The mushroom leftovers make a damn fine pan reduction sauce. I like to add some parsley while the wine reduces. The steak usually leaves behind enough seasoning for my taste.
